Ruian Distilled Spirit( Laojiu Sweat)

The Distilled Spirit first appeared in the Song Dynasty, over 1000 years ago. Its brewing method, totally different from that of any other liquor, is actually made by collecting condensed liquid drops of alcoholic vapor from heated rice wine. As rice wine is called Laojiu in Zhejiang Province, hence the name “Laojiu Sweat”. To produce it, rice wine, as a raw material, must be well fermented. The brewing method of Rui’an Laojiu Sweat is distinctive in its selection of raw materials, starter making, fermentation and extraction by heating. To command such unique brewing methods, a good master’s teaching and personal wisdom are needed, in addition to long-term accumulation of practical experience.
