Fried razor clam pillar

Razor clam is speciality of shoal, with big washiness,it’s meat is very fresh. The cooking method of this dish: firstly remove the shell of the razor clam, roll to a pillar shape by fried egg skin with ginger and shallot, then compose starches, put in to the oil bath, mixed with pungent sauce when eating.
