Nanxi Wheat Cake

The Nanxi Wheat Cake originated in Shatou Town of Yongjia County, Wenzhou. In the past, Shatou had quays where passengers could rest and wait for boats. Owing to the special flavor of the cake, they would buy it as a solid food for their journey. Ingredient proportion for the shell of the cake: 250g wheat flour, 1 egg and 1 tablespoon of vegetable oil. The ingredients are mixed and stirred to obtain a dough, which is then adequately kneaded. The dough may be divided into several ball-shaped parts and a concave is made at the center of each part to put in dried pickles, minced fresh meat, cooked small shrimps and MSG. Then the dough is closed and made into a flat and round shape. After that, it is put in an iron frying pan on fire till both sides turn white. Then it is baked in an oven. The finished cake, crispy outside and soft inside, smells aromatic and tastes delicious.
